This May in celebration of Le French GourMay, Brasseries on the Eighth will be offering a feast of French gastronomy complete with Rhone Valley wines for the whole of May.

For a price of HK$788 per person, the 4-course dinner menu brings to you the essence of French cuisine. The over-roasted Monkfish Tail Wrapped with Bayon Ham, Jerusalem Artichoke Puree and Mushroon Jus combines the crispy texture of the Bayon Ham to the monkfish creating a sophisticated culinary experience. The sweetness of the fish and the artichoke puree will surely bring joy to your mouth as the flavor spreads.

French Bresse pigeon and goose liver “pot au feu” with vegetable and salsify

The other highlight of this menu is the “French Bresse Pigeon and Goose Liver Pot-au-feu with Vegetable and Salsify”. Poached in pigeon stock, the pigeon breast and leg is stuffed with goose liver under a low heat to enhance the flavor and keep the tenderness of the meat. For a complete culinary sensation, the earthiness of “Perrin  & Fils, Vacqueyras ‘Les Christin’ 2011” will complement the buttery goose liver and further escalate the complexity of the dish!
